Vegan Lactation Cookies

C soy butter
3/4 C sugar
3/4 C brown sugar
4 Tbsp water
3 Tbsp flaxseed meal
3/4 C sugar

tsp Egg Replacer mixed with 5 Tbsp water
2 tsp vanilla
3 C whole wheat flour
1 tsp baking soda
1 tsp salt
3 C Thick cut oats
2 C Chocolate chips (box of dates, raisins, toffee chips, butterscotch chips, etc)
2-4 T Brewers Yeast or Nutritional Yeast

- Preheat to 375 degrees
- Mix water and flax seed meal in small bowl and set aside.
- In large bowl cream butter and sugars
- Add Egg Replacer mix and Vanilla; mix well
- Sift together flour, baking soda, yeast, and salt- mix into creamed butter and sugar
- Fold in oats and chocolate chips
- Scoop medium size balls on well sprayed cookie sheets, kind of squish them down a little.
- Bake for 9-11 minutes.
